The following quantities are for a 20litre batch. Adjust accordingly.

4.75kg Pale Malt 250g Crystal Malt
[edit] Hops
16g Southern Promise (pellets) 60 min. 20g Fuggles 15 min.

Safale S-04.
Mash for 75 min. at 68C. Sparge at least 40 min. Boil 60 min.
Ferment in primary until done (SG 1.009 for this yeast) or a week. I ferment at ambient, but in the coolest room of the house, so usually temps in the low 20's. Rack to secondary for a week (two would be better) before bottling. Condition at least 3 weeks in the bottle.

Honey-blonde colour. Nice fragrant, sweetish aroma. Flavour is light, malty, well-suited to a hot-Summer's post-gardening tankard, with honey tones in the middle, and just enough hint of bitter to finish.

I have increased bittering to 20g Southern Promise on occasion, producing something that probably qualifies more as a bitter than an English Ale. Some might consider the original recipe as veering more toward a Bitter, too, though...
I've now run out of Fuggles hops and refuse to deal with the local incompetents who claim to be homebrew suppliers, so I'll be switching to something else, as yet undetermined.
