BREW DAY THURSDAY 20 MARCH 2008
Ingredients
5 kg crushed pale malt from Boston Breweries
500 gr Bokomo Maize Flakes
Handful Chrystal Malt
15 gr SAB George Hops – 90 minutes
05 gr Fuggles Hops – 90 minutes
15 gr Fuggles Hops – 15 minutes
1 Litre Boston Breweries Yeast ( which I believe is SAFLAGER )
Strike heat of 15 litres water in mash tun 81 degrees C Came down to 68 degrees C Closed mash tun with douvet en left for 90 minutes Lost only 1 degree C After run off added 10 litres 80 degrees C water to mash tun and left for 15 minutes After 2nd run off added another 10 litres 80 degrees C water to mash tun and again left for 15 minutes After this final run off collected a total of 30 litres wort in boiler After wort was brought to the boil, first batch of hops ( 15 gr SAB George and 5 gr Fuggles ) added 15 Minutes before end of 90 minutes boil the 15 gr Fuggles Hops was added I used water frozen in sterile plastic bags to bring down the temperature to 25 degrees C Poured everything into fermenter and placed inside fridge overnight to cool down to 10 degrees C ( SG of 1033 ) and pitched yeast morning of 21 March 2008. By that evening it was fermenting perfectly. Bottled Thursday 27 March 2008 ( SG 1010 ) and no priming at all
PROBLEM WITH NO PRIMING IS THAT I HAVE TO WAIT AT LEAST FOUR WEEKS BEFORE I CAN HAVE ONE OF THESE BEERS
