4kg Base pale malt
360 gm. Cara 60 ( red caramel malt )
100 gm. Belgian Special B
80 gm Chocolate malt

I generally mash with around 12 liters ( at a strike temp of 76C ) for a quantity like this.

Mash temp init: 68.5C
Mash temp end: 67 C

Mash time: 1.15h
Sparge time 40 m

First Wort Hopping ( pre-boil hops ) 10gm US 4/78 ( SAB saaz-type hop ) About 8-9% Alpha acid.
60mins 26gm
10mins 10gm
10mins One heaped teaspoon Irish moss
2mins 6gms Hallertauer hops ( around 6% AAU I think )

Force chilled.

1 sachet Fermentis S33 Yeast

O.G. 1. 051 F.G. 1. 018

Three weeks in primary fermenter ( slow yeast to clear ) One week bottle conditioned.

Baseline Pale Ale - Mike Morris
Baseline Ale is my all-grain baseline control against which I measure all other similar-style recipes and experiments. A simple, single-step infusion mash so that I can vary one ingredient or processing step at a time and always have a baseline to compare against. Despite its "scientific" and simple nature, the recipe produces a very nice, quaffable light ale eminently suited to Summer cooling-off.
